The first day of the BRICS 2026 summit ends with a sumptuous dinner. World leaders attended the ongoing summit in New Delhi where they were served a range of Indian vegetarian dishes at a gala dinner hosted by Prime Minister Narendra Modi on Saturday. There was a wide variety of dishes from different regions of the country such as Khandvi Mille-Feuille, Khumb Galouti, Paneer Lababdar, Millet Pulao and more. Selected traditional Indian desserts were part of today’s evening menu.

The dinner menu started with the Khandvi Mille-Feuille, described as a steamed gram flour roulade tempered with mustard, coconut and curry leaves. Next on the list is Khumb Galouti, pan-grilled tender mushroom kebabs served with mint pearls and pearl barley.

The main course consisted of Paneer Lababdar, Gucchi Marmik made with Himalayan Mushrooms and Asparagus, Carrot Bean Poriyal with South Indian Spices and Coconut, Thakkali Belle Saaru, Millet Pulao and Beetroot Raita along with various Indian breads on the side.

Dinner ended on a sweet note with dessert options including Old Delhi Fruit Cream with Jalebi and Shahtoot Phirni, Slow Cooked Milk and Rice Pudding with Mulberries and Gold Leaf.

Drinks served at dinner were pomegranate juice and coconut water, described as “a stream of refreshing flavors”.

18th BRICS summit

The 18th BRICS Summit is being hosted by India under the theme “Building for Resilience, Innovation, Cooperation and Sustainability”, with development, sustainability and innovation as key areas.

BRICS has emerged as an important platform for coordination among major emerging economies and for promoting the interests of the Global South in multilateral institutions. Its agenda includes development, finance, technology, trade and people-to-people exchanges.

The grouping currently includes 11 countries including Brazil, China, Egypt, Ethiopia, India, Indonesia, Iran, Russia, Saudi Arabia, South Africa and the UAE.
