
Nolen gur is an aromatic, liquid jaggery made from freshly squeezed date palm juice and prized for its woody, caramel flavor. “We own the entire value chain in jaggery. The sap is collected by our taps and we have revived traditional practices such as collecting the sap in earthen pots, rotating the trees from where the sap is collected, slow cooking the sap using specific woods (like Sonajhuri) that give the jaggery its distinct flavor,” said Senjuti Mahato, co-founder of Story Farms.
