Madurai’s iconic summer cooler, jigarthand, is sipped from global fame. The application was submitted in the GI register in Chennai, which was looking for a geographical indication brand (GI) for Madurai Jigarthand, a delicacy based on the Milk Synonym for Temple City.
The application was jointly submitted by Madurai the famous Association of Jigarthand and Tamil Nadu State Council for Science and Technology. From the beginning of pushcart to the cult status Madurai Jigarthand enthusiastic people for decades.
Madurai Jigarthand watches his roots up to 70 years when the founder Sheikh Abdul Kadhar joined the humble store with his family’s pushcart in the city. In 1977, business gradually evolved into a small shop near Vilakkuhuhoon AI today is doing well. The store serves thousands of glasses of this drink every day.
According to GI details, Jigarthand is now managed by PS Beer Mohammed & Brothers. The process of preparation lasts for three days. The drink is prepared using a unique almond rubber, Sarsaparilla, sugar and ice cream syrup.
Milk for the preparation of jigarthand is obtained in Madurai in the region, such as Elumalai in Peraiyur Taluk, Alanganallur in Vadipatti Taluk and Palamed. The almond rubber is soaked in water for 24 hours to achieve optimal swelling and soft texture. Meanwhile, the root of Nannari, sugar and water all day long boiled on traditional wooden fire, which allows a slow decoction that deepens both the taste and smell. The thump ice cream is spewed by condensed milk to increase its richness.
