Several hygiene violations were found in several restaurants in Hyderabad

Food safety teams from the Cyberabad Municipal Corporation (CMC) on Saturday, June 27, uncovered numerous hygiene violations during an inspection at Shah Ghouse Hotel and Restaurant in Gachibowli and Mehfil Restaurant in Hitech City, raising concerns over food safety practices at Hyderabad’s most popular biryani establishments.

At Shah Ghouse, officials found flies throughout the kitchen, poor housekeeping with a build-up of grease, dirt and dust and an unsanitary non-vegetarian cutting area that posed a risk of cross-contamination. The inspection also revealed open drains with an accumulation of food waste, an unclean washing area and a water leak in the warehouse. The teams further found semi-prepared food stored without labels while the establishment did not submit water testing records during the inspection. Gutka stains were also observed on the kitchen walls, indicating poor hygiene and maintenance.

At the Mehfil restaurant, the inspection revealed substandard kitchen facilities, wet floors with food build-up and unhygienic food classification practices. It was found that preparation of rumali roti was going on in the under construction area which was immediately stopped by the inspection team.

At Palamuru Grill and Bar in Kondapur, tampering with labels was observed on prepared food items. Expired food and expired mushrooms were found and discarded, while houseflies were present in the kitchen. Officials also noted a build-up of grease and grime on ceilings and light fixtures, a rusted freezer with pooling water posing a contamination risk, and failure to sanitize dishes with hot water. Water testing reports were not available during the review.

At Vijayawada Special Krishna Cafe in Gajularamaram, the kitchen was found to be partially open. Officers observed overflowing uncovered fly bins near food preparation areas and found dough, chutneys and chopped vegetables stored uncovered and unlabeled in refrigerators. Raw materials were stored in a disorderly manner with spilled substances, while water stagnation was noted near the washing area. Iron knives used for food preparation were discarded during the inspection.

At Ideal Kitchen in Madhapur, loose dough and convenience foods were stored in freezers and dead cockroaches were found on the dough. The inspectors also found wet floors with accumulation of food, raw materials stored directly on the floor without pallets, an increasing risk of contamination and insects in stored offices.

An inspection at J. Vishnu Vardhan Reddy Swagruha Foods revealed that the kitchen was open to the outside, allowing dust and pests to enter. Officials found no provision to monitor total polar compounds (TPC) in used cooking oil, suggesting possible reuse of excess used oil. Raw materials were stored directly on the floor. Stagnation of water was observed near the washing area and packaged sweets and bacon without mandatory labels were found. The inspection revealed cobwebs, dust, poor lighting and water leaks in the warehouse, rat holes near the packing room and a sugar bug infestation in the warehouse.
